Cost Controller – F&B Division – AlBabtain Group of Companies

Key Responsibilities 

1. Cost Monitoring & Control 

  • Monitor daily, weekly, and monthly costs of all ingredients. 
  • Analyze cost variances and identify inefficiencies or waste. 
  • Maintain optimal cost percentages aligned with premium café benchmarks. 

2. Inventory Management 

  • Maintain accurate inventory levels for coffee beans, syrups, dairy, bakery items, and retail products. 
  • Conduct regular stock counts and reconcile discrepancies. 
  • Ensure proper storage and minimize spoilage of high-quality products. 

3. Purchasing & Supplier Coordination 

  • Coordinate with approved Lavazza suppliers and local vendors. 
  • Ensure compliance with brand-approved product sourcing. 
  • Negotiate pricing while maintaining premium quality standards. 

4. Menu Costing & Pricing 

  • Prepare detailed cost sheets for all menu items including specialty beverages. 
  • Ensure profitability while maintaining competitive premium pricing. 
  • Update costing based on market price fluctuations. 

5. Financial Reporting 

  • Prepare detailed cost and profitability reports. 
  • Track key metrics such as cost of goods sold (COGS) and gross margins. 
  • Provide actionable insights to management. 

6. Waste & Loss Control 

  • Monitor coffee waste, milk usage, and product expiry. 
  • Implement waste reduction strategies aligned with sustainability practices. 
  • Train staff on proper portioning and handling of premium products. 

7. Brand Compliance & Standards 

  • Ensure adherence to Lavazza brand guidelines and operational standards. 
  • Maintain accurate records for audits and inspections. 
  • Collaborate with operations team to ensure consistency across outlets.
